KIMCHI

We blend chinese leaf with aromatic vegetables, ginger, garlic and red pepper flakes. We use less spice but more ginger than traditional. Great for elevating your cooking and bringing life to simple meals. Our kimchi is great for balancing rich fatty dishes and works a treat as a convenient condiment or ingredient in just about anything, from breakfast to midnight snacks!

SAUERKRAUT

An aromatic blend of white cabbage, caraway, bay leaf and juniper. The zesty zing of our sauerkraut will lift almost any dish, the spices add a lovely floral note that balances perfectly with the peppery sweetness of cabbage. Clean, refreshing and tangy with a great crunch! 

SAUERBEET

A rich and playful blend of beetroot, red cabbage and fennel seed. The aniseed pop of fennel melds with the earthy sweetness of beetroot, to give you a vibrant fresh flavour and distinctive tartness that we think is sensational!  The freshness of this blend, with its earthy tang is so easy to use that you’ll soon find it becoming an integral part of your cooking.

TASTES GREAT WITH

Kimchi - add to stir fry’s, ramen bowls, soups, egg and fish dishes for a spicy umami flavour. We particularly love our kimchi in a cheese toastie, with scrambled eggs, mac cheese or as a burger topping.

Sauerkraut - try with barbequed meats, fish, salads and sandwiches. Stir into casseroles and soups. Especially good with melted cheese - we love adding a spoonful to pizzas or toasties. Perfect for cutting through rich and creamy dishes.

Beetkraut - the firm texture of this pickle is perfect in salads or stirred through raw or roasted vegetables to bring out all their flavours. For a shot of flavour and colour, we can’t stop adding sauerbeet to our roast dinners, new potatoes or pasta sauces. A spoonful stirred through a curry is also a favorite. 

  • GUT HEALTH

    Unpasteurised fermented foods are loaded with probiotics, which are live microorganisms that can aid digestion and strengthen your gut microbiome. These microorganisms can restore the balance of naturally occurring beneficial bacteria in your gut, compete with harmful bacteria and help you to digest fibre. Due to the high levels of fibre in Sauerkrauts and Kimchi, they are also a good source of prebiotics. Prebiotics act as food for the microorganisms in your gut. By strengthening your probiotic microorganisms, you are then in turn giving your microbiome a further helping hand. A healthy gut means better digestion, stronger immunity, and even improved mood.

  • NUTRITION

    Fermentation can help to increase the health potential of foods by making fibre, vitamins and minerals more readily available for our bodies to absorb. Our ferments are a good source of vitamin C, vitamin A, B vitamins and vitamin K. They are also a good source of iron, potassium, magnesium and zinc. These nutrients have a number of possible benefits such as increased bone health, improved muscle and nerve function, a reduced risk of heart disease, lower cholesterol levels and improved immune function and healing.

  • PACKAGING

    Why plastic pouches? Because we can’t stand fizzy food! You’ll often see producers showing off how their ferments fizz over when you open their glass jars. Although this proves that they are alive and well, it also means that the contents have been naturally carbonated and fizzy when you eat them.

    We also weighed up the carbon footprint of recyclable plastic against glass jars. A 500ml glass jar and lid can create between 1.4 – 1.8kg CO2e. Our pouches are made of MDOPE/PE-EVOH which is not known to leach into food. These pouches can create 0.02 – 0.03kg CO2e per pouch. This means that we could make 60 – 70 pouches for every glass jar and lid. When you add the extra fuel needed to transport the much heavier glass jars, our carbon footprint is lowered even more!
