Creamy, rich and irresistible – with a fermented twist
This is the kind of dish that earns its name. Inspired by the much-loved “Marry Me” style recipes, these Sauerkraut “Marry Me” Mushrooms are rich, creamy and packed with deep umami flavour. Earthy mushrooms, sweet tomatoes and warming spices come together in one pan, finished with parmesan and fresh basil.

For a vegan version, replace the butter, cream and parmesan with any vegan alternative. They work just as well and can add an extra dimension to the dish.
Ingredients
30g unsalted butter
½tsp salt
½tsp dried oregano
½ red chilli, finely sliced
1tsp smoked paprika
¼tsp ground black pepper
450g chestnut mushrooms (or a mix of other mushrooms), washed
200g cherry tomatoes, halved
2 cloves garlic, finely chopped or minced
50g sun-dried tomatoes, roughly chopped
250ml vegetable stock
150g Cultura Live Food Sauerkraut, drained and finely chopped
200ml double cream
50g parmesan, grated
1 small bunch basil, finely chopped (reserve some small leaves for garnish)
Method
Heat the butter in a large sauté pan or pot over medium heat. Add the chilli, oregano, smoked paprika, and black pepper. Cook for 1-2 minutes, until the butter melts and the spices become fragrant.
Add the mushrooms, salt, cherry tomatoes, garlic and sun-dried tomatoes. Cook uncovered, stirring often, until the mushrooms release their moisture and it evaporates, allowing the tomatoes to break down into a thick, rich sauce – around 15 minutes.
Stir in the vegetable stock and continue cooking until the sauce thickens again, about 10 minutes.
Stir in the cream, parmesan and fresh basil, mixing until smooth, glossy and heated through.
